Salad of cherry tomatoes and blackberries with beach wormwood
Ingredients
- 2 twigs beach wormwood (or wild thyme or yarrow)
- 200 g cherry tomatoes
- 500 ml olive oil
- 1 tablespoon vinegar
- 1 handful blackberries
- Salt
- Pepper
Directions
- Rinse the beach wormwood and pick off the leaves. Put leaves on a paper towel or kitchen towel and set aside.
- Rinse cherry tomatoes and cut in quarters. Rinse blackberries and cut in halves.
- Arrange blackberries and tomatoes on a plate. Sprinkle beach wormwood leaves on top. Beach wormwood is very bitter, so be sure to distribute evenly.
- Mix oil, vinegar, salt, and pepper. Pour dressing over the salad, and serve.
Tips
This salad is a bit tart, so it works well as the side dish of a piece of fish or meat. You can also serve it as an appetizer with a soft cheese like mozzarella or burrata.
