Salad of cherry tomatoes and blackberries with beach wormwood

Ingredients
  • 2 twigs beach wormwood (or wild thyme or yarrow)
  • 200 g cherry tomatoes
  • 500 ml olive oil
  • 1 tablespoon vinegar
  • 1 handful blackberries
  • Salt
  • Pepper
Directions
  1. Rinse the beach wormwood and pick off the leaves. Put leaves on a paper towel or kitchen towel and set aside.
  2. Rinse cherry tomatoes and cut in quarters. Rinse blackberries and cut in halves.
  3. Arrange blackberries and tomatoes on a plate. Sprinkle beach wormwood leaves on top. Beach wormwood is very bitter, so be sure to distribute evenly.
  4. Mix oil, vinegar, salt, and pepper. Pour dressing over the salad, and serve.
  • Tips

    This salad is a bit tart, so it works well as the side dish of a piece of fish or meat. You can also serve it as an appetizer with a soft cheese like mozzarella or burrata.
