Beech drink

Ingredients
  • 300g sugar
  • 500ml water
  • Large handful of light green beech leaves, enough to pack into a blender
  • Ice cubes
Equipment
  • Fine mesh strainer or cloth
Directions
  1. Pour sugar and water in a pot and boil until the sugar is completely dissolved.
  2. Let the liquid cool.
  3. Pour the cooled syrup in a blender and add as many beech leaves as you can fit.
  4. Blend until smooth, and strain through a sieve or a piece of cloth. Repeat until all of the mixture is strained. Discard pulp or save for another use.
  5. Serve in a glass with lots of ice cubes.
  • Tips

    Beech drink is easy to make and suits both children and adults. If you want to mix it with alcohol, aquavit is a good choice.
