Beech drink
Ingredients
- 300g sugar
- 500ml water
- Large handful of light green beech leaves, enough to pack into a blender
- Ice cubes
Equipment
- Fine mesh strainer or cloth
Directions
- Pour sugar and water in a pot and boil until the sugar is completely dissolved.
- Let the liquid cool.
- Pour the cooled syrup in a blender and add as many beech leaves as you can fit.
- Blend until smooth, and strain through a sieve or a piece of cloth. Repeat until all of the mixture is strained. Discard pulp or save for another use.
- Serve in a glass with lots of ice cubes.
Tips
Beech drink is easy to make and suits both children and adults. If you want to mix it with alcohol, aquavit is a good choice.
