Claus is a trained gardener, elementary school teacher, and ranger. He is head of the Børge Hinsch Foundation's Nature School at Valdemar's Castle, and he has worked with natural products—and with cooking inspired by nature—his whole life. He has worked with various populations and communities, from toddlers to dementia patients, to bring nature into the kitchen.
