Troels is a trained ranger, and works for the municipality of Haderslev as the head of its nature schools. The majority of his work is aimed at schools and institutions in the municipality, but he also takes care of communication for the Danish Nature Agency of South Jutland. Most of his activities are centered around the Nørskovgård nature school in Haderslev’s deer park and the Perleholm nature school at Stursbøl plantation, but he also travels around the municipality to teach in forests or by lakes and beaches. Cooking in the open is part of the trips for both children and adults, and some of the ingredients needed are gathered or caught on sight. He also teaches about food knowledge, sustainablity, and health.
