Jakob is a trained biologist, pedagogue, and ranger. He has worked for the municipality of Gentofte since 2006, but h has always been interested in foraging herbs and mushrooms. His permanent base is the nature workshop of Ordrup Hus, where his responsibilities include Ordrup Krat, Jægersborg deer park, Jægersborg Hegn, Ermelunden, and Gentofte Lake. He is fascinated by flavor and considers foraging an exciting opportunity to develop and expand the flavors of our food. He offers guided foraging tours and courses, which combine collecting seasonal herbs, mushrooms, and fruits, with cooking.
