Karen is a trained biologist and works as a ranger and communicator at the School Gardens of Copenhagen. Karen has taught in school gardens for the last 20 years and has cooked with vegetables over open fires with thousands of kindergarteners, school children, students, and families. In the Copenhagen School Gardens , they focus on educating kids about the origins of their food by teaching them how to farm, and how to cook with both the plants they have grown and foraged. The garden is an oasis in the middle of the city with herbs, bushes, and trees.
