Leif has worked with nature’s pantry since the end of the 80's. Today he is a ranger and head of the nature school of Trente Mølle and its numerous satellites. He has taught about, and consumed, the majority of the nature on the South of Funen. For years he called this initiative “Eat your roadside,” and now his activities are part of Vild Mad. Leif is very interested in experimentation, using the plants for both cooking and beer brewing, and in the ethnobotanical aspect of plants.
