Mads is a trained forestry and landscape engineer, as well as a ranger. He works for the Ishøj Nature Center, which brings together teachers and other educators, kitchen staff, and volunteers to forge connections around learning and cooking with wild plants. The knowledge of food, biology, language, and other subject all play a role in this work.  Seventy-five percent of the municipality consists of blue and green areas, and wild food can be found both by the coast, in the forest, or between the houses.
