Sam is a ranger at the Sønderskov museum, where he is the head of the nature and culture programs for kindergartens and schools in the municipality of Vejen. He teaches about everything nature has to offer, particularly its pantry. “Eat your way through the year”, ground to table, foraging, and much more has been part of his work since he started as a nature guide in the state forest in the 90's. Sam loves to experiment with new flavors and new ways to use ingredients.
